Cheese Roll Ups

Cheese Spirals
16 oz cream cheese, softened
1 package ranch salad dressing mix
2 green onions, minced
4 12-inch flour tortillas
1/2 cup diced red pepper
1/2 cup diced celery
1 2-oz can sliced black olives (these are in the original recipe, but I never include them)
1/2 cup shredded cheddar cheese

In a medium bowl combine the cream cheese, salad dressing mix, and green onions.  ***EDIT:  We were experimenting recently, and it’s even more delicious if you mix the red pepper and celery into the cream cheese mixture.  And they also hold together better.***   Beat with an electric mixer until fluffy.  Spread 1/4 of the mixture on each tortilla.  Sprinkle cheese over cream cheese mixture.  Roll up the tortillas and wrap them tightly in aluminum foil.  Chill for at least 2 hours, the cut the rolls into 1 inch slices to serve.
