Bean Dip

Bean Dip (Steph says she could probably eat this entire thing in one sitting.  She wishes she making that up haha.)

2 tbsp butter (original recipe calls for 4 tbsp, I think it turns out better with 2 tbsp)
1 small onion, chopped
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, minced
1 can pinto beans, drained
1 cup shredded Monterey Jack cheese

In a medium saucepan melt the butter.  Add the onion, jalapeno pepper, and garlic, and saute for 5 minutes or until tender.  Place the beans in a medium bowl, and mash with a fork.  Stir into the onion mixture.  Cook, stirring constantly, over low heat until hot but not boiling.  Stir in the cheese and cook until cheese begins to melt.  Serve with chips.
